Crackle Crystals
If you want to add some fun to your dessert menu
you must try these little beauties.
Crackle Crystals are carbonated sugar crystals
which have been coated with cocoa butter. The
cocoa butter shrouds the crystals and protects
them from moisture.
The warmth of the mouth very quickly melts the
cocoa butter. When the cocoa butter melts, the
crystals are activated and provide a unique popping
and tingling sensation.
This normally results in a very big smile on the
customers face, which is quickly followed with
a phrase directed at their companion such as,
‘Wow! That’s amazing, you’ve
got to try this!’

desserts, sorbets, sauces, cakes, confectionary

can only be created by using the finest of ingredients.
Initially, flavours and colours are hand rubbed
with premium quality sugar cane. The batch is
then left to infuse within a finely controlled
atmosphere in order to achieve the correct moisture
level.
