Cocoa Nibs & Torrone
Nougat Pieces
Cocoa Nibs are fantastic for adding a subtle chocolate
flavour and crunchy texture to dishes. The nibs
are made by roasting the cocoa bean once it has
been separated from its husk and then broken into
small pieces.
The Nibs make a great substitute for roasted nuts
or chocolate chips without adding sweetness.

Cocoa Powder
Cocoa Powders offer a alternative to Baking Powder.
Cocoa powder is made when chocolate liquor is
pressed to remove three quarters of its cocoa
butter. The remaining cocoa solids are then processed
to make fine unsweetened cocoa powder.
Cocoa powders are only worth using if they have
a quality of smoothness and flavour Many cheap
alternatives can be excessively sour and acidic
to taste.
In order to provide flexibility we have three
different cocoa powders in our range.
Dark Red
W hich has a 12% fat content and produces a mild
and subtle flavour.
Black
Which also has a 12% fat content but is deeper
in colour and has slightly more intense flavour.
24% fat
Which has a very smooth and luxuriously oily texture.
